While the western world is talking much about 'turmeric latte', we already have our very own 'haldi-wala doodh' that resembles the global sensation in large way.
Turmeric milk has been an intrinsic part of Indian diet since time immemorial.
Back to my story, my mom decided to add some thandai masala to my haldar nu doodh to make it tasty and get me to drink it.
Ingredients of THANDAI LATTE (Thandai wala Doodh)
- You need 12 of Almonds.
- You need 12 of Cashews.
- You need 12 of Pistachios.
- You need 1 tbsp of Melon seeds.
- It's 20-25 of Black Pepper corns.
- It's 2 tsp of Poppy Seeds (white poppy seeds are used for this beverage).
- Prepare 1 tsp of Fennel seeds.
- It's 1/3 cup of Water.
- Prepare 1/2 tsp of Cardamom powder.
- You need 1 pinch of Saffron plus extra for garnish.
- It's 3 tbsp of Milk.
- It's 1 tsp of Cornflour.
- It's 3 tbsp of Milk.
- You need 4-5 tsp of Sweetner of your choice (I had used agave nectar).
- It's 600 ml of Milk (dairy or non dairy).
THANDAI LATTE (Thandai wala Doodh) step by step
- Wash and soak the first seven ingredients in one third cup water, over night. Grind the soaked seven ingredients, along with the water, to a smooth paste..
- Soak saffron in a three tablespoons milk. Set aside for atleat an hour. (the longer the better).
- Heat the milk and add the saffron milk to it along with the paste. Stir well and simmer on low heat for 5 – 7 minutes. Stir every now and then..
- Mix the cornflour well in the remaining three tablespoons milk and add gradually to the simmering milk, stirring all the while..
- Add cardamom powder and simmer further for a minute. Switch off the heat and add sweetener of your choice. Serve hot and enjoy!.
- NOTE - You can sieve the milk before serving or you can serve it as it is..
- Note - If you like the milk frothy, you can whisk it using a hand whisk or an electric mixer or perhaps an immersion blender..
- Pour in serving glasses and garnish with finely chopped pistachios and slivered almonds and a few threads of saffron (garnish is optional).
